HACIENDA LA ESMERALDA, GESHA LOT 5 AFB WASHED, PANAMA
Hacienda La Esmeralda is a benchmark producer that has changed the global coffee scene with its extraordinary Gesha coffees grown at high altitudes in Panama.
It launched a new era in the story of Gesha with its Best of Panama victory in 2004, and furthered this legacy by taking first place in all three main categories of the competition in 2025.
Portón 5AFB is a fully traceable Gesha lot from the Portón section located on the El Velo farm. With its delicate production process and unique character, it brings the pure expression of these lands to the cup.
The floral elegance of high-altitude Gesha comes together with jasmine aroma, sugarcane sweetness, the vibrant fruit character of sour cherry, and the bright citrus structure of blood orange.
99.9% Defect Free
Every cup is shaped before roasting begins.
Even a single defective bean can alter the character of the cup. That is why every batch of coffee is carefully inspected before roasting. After roasting, the beans are checked and sorted again for quakers, broken beans, insect damage, over-fermentation, and other defects that could negatively affect cup quality.
Cleaner flavors in every package, a more balanced character, and the same reliability in every cup.
Consistency at Ultra is not a coincidence.

Instead of changing the flow, control the flow itself.
Ultra Continuous Flow is a brewing approach developed by Ultra to express the character of its coffee with greater control.
Unlike classic multi-pour methods, the pour continues without interruption after the bloom. In the first stage, a controlled and balanced extraction is achieved with a center pour, while the fast circle pour reaches the entire coffee bed without breaking the flow.
The goal of this approach is to maintain the flow within the coffee bed to make water's contact with the coffee more controlled and to complete the extraction in a balanced manner.
BREWING RECIPE AND PARAMETERS
Dose: 12.5 g
Water: 200 g
Temperature: 96°C
Ratio: 1:16
Brew Time: 2:30–2:45
Target TDS: 1.25–1.35
Brewer: Flat-bottom
Grind: Should be adjusted according to the brew time.
ULTRA CONTINUOUS FLOW
1. Blooming — 40 g
Pour 40 g of water using the circle pour technique. Ensure the entire coffee bed is evenly saturated. Wait for 30–45 seconds.
2. Continuous Flow — 160 g
After the bloom time, continue without stopping the pour. The second pour consists of two different rhythms, but there is no pause in between.
First stage — 120 g
Reach 120 g of water in a controlled manner using the center pour technique. By directing the pour primarily toward the center, ensure a balanced flow without over-agitating the coffee bed.
Continuing — the final 40 g
Without breaking the pour, complete the final 40 g of water using the fast circle pour technique. This stage brings the coffee remaining on the sides toward the center, levels the coffee bed, and ensures the final extraction is complete.
BREWING NOTES
If the brew time falls outside the target range, adjust your grind setting accordingly.
The roast date of the coffee, the equipment you use, and the water quality may affect the brewing result. To achieve the best result, we recommend keeping the recipe constant and only adjusting the grind setting in a controlled manner.
Brew with precision. Discover the character.

WHERE DOES THE STORY BEGIN?
black edition
Black Edition is reserved for Ultra’s most exclusive and limited lots.
The selection process here is not just about finding high-scoring coffee. The producer’s history, the lot’s traceability, the precision in its production, and its character in the cup are all evaluated together.
Coffees sourced from the world's benchmark producers—those with clear origins and stories that stand in a category of their own—are included in the Black Edition selection.
Every Black Edition coffee does not have to be the same. One might represent an extraordinary variety, another a unique production technique, or a very specific expression of terroir.
They share only one common trait:
They are so special that they cannot easily be replaced by another coffee.
For this reason, Portón 5AFB has been selected as Black Edition 001.
HACIENDA LA ESMERALDA
The farm that changed the history of Panama Gesha
Located in the Boquete region of Panama, nestled among high-altitude mountains, Hacienda La Esmeralda is a legacy of coffee production cultivated by the Peterson family for generations.
The turning point that elevated the farm to a unique place in the coffee world came in 2004. A lot where the Gesha trees grown on the estate were separated from other varieties and processed individually drew attention at the Best of Panama competition with its extraordinary floral and aromatic character.
This result became a milestone not only for Hacienda La Esmeralda but also for the global recognition of Panama Gesha.
Today, Hacienda La Esmeralda is considered one of the world's reference producers of Gesha. With its different farms, production areas, and individually tracked lots, it reveals how the same variety can acquire different expressions through altitude, microclimate, and processing.
And the story of the coffee we have chosen begins in one of these lands:
El Velo.
THE VEIL
One of the highest-altitude production areas of Hacienda La Esmeralda
El Velo, one of the key centers for Hacienda La Esmeralda’s Gesha production, is located in the Quiel region of Panama at an altitude range of approximately 1,650–1,900 meters.
The high altitude, cool nighttime temperatures, and mountainous microclimate allow coffee cherries to ripen more slowly. This prolonged development process contributes to the development of Gesha’s floral and fruity character in a more pronounced and layered way.
El Velo is not considered a single homogeneous production area. The farm is divided into smaller sections, each with its own microclimate and topographic features, and the coffees are tracked as separate lots according to these areas.
The coffee we have selected comes from one of these sections within El Velo:
PORTÓN
And it can be traced back to a single harvest lot there:
PORTÓN 5AFB
GATE 5AFB
A single production area. A single lot.
Portón 5AFB is a highly traceable Gesha lot from the production area identified as Portón at Hacienda La Esmeralda’s El Velo farm.
The goal of this lot is not only to showcase the floral character of Gesha, but also to convey the microclimate where it was grown and the production process into the cup as clearly as possible.
One of the most important stages that determines the character of Portón 5AFB begins after the harvest.
The cherries are subjected to 4 days of anaerobic fermentation under controlled conditions. Afterward, a washed process is applied, and the coffee is slowly dried on raised beds for 19 days.
This meticulous production process highlights the cleanliness of the lot and the elegant aromatic structure of the Gesha.
