99.9% Defect Free
Every cup is shaped before roasting even begins.
A single defective bean can alter the character of a cup. For this reason, every batch of coffee is carefully inspected before it is roasted. After roasting, it is re-checked and sorted to remove quakers, broken beans, insect damage, over-fermentation, and other defects that could negatively affect cup quality.
Cleaner flavors in every bag, a more balanced character, and consistent reliability in every cup.
At Ultra, consistency is no coincidence.

Instead of changing the flow, control the flow itself.
Ultra Continuous Flow is a brewing approach developed by Ultra to express the coffee's character in a more controlled manner.
Unlike classic multi-pour methods, the pour continues without interruption after the blooming phase. In the first stage, a controlled and balanced extraction is achieved via center pour, while the entire coffee bed is reached through fast circle pour without ever stopping the flow.
The purpose of this approach is to make the water's contact with the coffee more controlled by maintaining the flow through the coffee bed, thereby completing the extraction in a balanced way.
Instead of changing the flow, controlling the flow itself.
BREWING RECIPE AND PARAMETERS
Dose: 12.5 g
Water: 200 g
Temperature: 96°C
Ratio: 1:16
Brew Time: 2:30–2:45
Target TDS: 1.25–1.35
Brewer: Flat-bottom
Grind: Should be adjusted according to the brew time.
ULTRA CONTINUOUS FLOW
1. Blooming — 40 g
Pour 40 g of water using the circle pour technique. Ensure the entire coffee bed is wetted evenly. Wait 30–45 seconds.
2. Continuous Flow — 160 g
After the blooming time, continue the pour without stopping. The second pour consists of two different rhythms, but there is no pause between them.
First stage — 120 g
Reach 120 g of water in a controlled manner using the center pour technique. Direct the pour mainly to the center to ensure a balanced flow without over-agitating the coffee bed.
Following this — final 40 g
Without stopping the pour, complete the final 40 g of water using the fast circle pour technique with rapid, circular movements. This stage brings the coffee remaining on the sides to the center, flattens the coffee bed, and ensures the final extraction is completed.
BREWING NOTES
If the brew time falls outside the target range, adjust your grind size accordingly.
The roast date of the coffee, the equipment you use, and water quality can affect the brewing result. To achieve the best result, we recommend keeping the recipe constant and only adjusting the grind size in a controlled manner.

CUP OF EXCELLENCE
Cup of Excellence is a prestigious coffee competition and auction program based on international jury evaluation, organized to identify exceptional coffees grown in different coffee-producing countries around the world. Since 1999, it has aimed to directly increase the visibility of and reward producers for their high-quality coffees.
A coffee reaching the Cup of Excellence is not the result of a single tasting. Throughout the competition, coffees are evaluated in multiple stages by a professional jury—first national and then international—using a blind tasting method. In each stage, only coffees that score above the determined threshold can proceed to the next stage. The lots that receive the highest scores in the final win the Cup of Excellence award and are put up for auction.
Las Virginias earned its place among these exclusive coffees by ranking 5th in the 2025 Honduras Cup of Excellence competition with a score of 88.78.
LAS VIRGINIAS — DOLMİN JOSUÉ MORENO ALVARADO
Located at an altitude of approximately 1,650 meters in the Santa Bárbara region of Honduras, Las Virginias is cultivated by third-generation producer Dolmin Josué Moreno Alvarado. Dolmin continues the coffee production he inherited from his family with a focus specifically on specialty coffee.
The Geisha grown at Las Virginias gains its character from the region's high altitude and the producer's meticulous approach. Coffees from this farm have appeared on the Cup of Excellence stage not only in 2025 but also in previous years.
